INGREDIENTS

1largemango

1/4cupstrawberry

1/4cupblueberry

1 1/2cupall purpose flour

2tablespoongranulated sugar

1teaspoonbaking powder

1 1/3cuplow fat milk

1egg

1/2cupwalnuts

1/2cupbanana

1/4teaspoonsalt

0maple syrup as required

1teaspoonvirgin olive oil

How to make Banana Walnut Pancake with Fruit Medley

Step 1

Peel the mango and then slice the fruit into chunks. Also cut the strawberries and blueberries into pieces. Mix all the fruits well and set aside.

Step 2

In a bowl, mix together flour, sugar, baking powder and salt.

Step 3

In another bowl, mash the banana well and mix in milk, egg and chopped walnuts. Now add the dry ingredients mixture to this mixture and mix well. If the mixture seems too thick, add little bit of milk.

Step 4

Heat griddle or skillet, preferably nonstick, until medium hot. Brush it properly with oil. Pour the batter on the pan, using 1/4 cup per pancake. Cook the pancake for about 2 minutes, then flip it and cook up to 1 minute or until golden in colour. Make more such pancakes with the leftover batter.

Step 5

Serve the pancakes with the prepared fruit medley and drizzle them with maple syrup or honey, if desired.
