Lauki Barfi

INGREDIENTS

1 kilograms bottle gourd

2 tablespoon ghee

3 1/2 cup milk

3/4 cup sugar

3/4 cup milk powder

2 drops edible food color

1 cup grated coconut

How to make Lauki Barfi

Step 1

Peel the bottle gourd and remove the hard seeds. Now grate the bottle gourd and collect in a bowl.

Step 2

Heat 1 tbsp ghee in a pan. Add grated bottle gourd and saute for 5-6 minutes or until it softens.

Step 3

Now add 2 cups of milk and cook for 20-22 minutes.

Step 4

Now add sugar along with green food colour. Cook for a few minutes or until the sugar melts completely. Switch off the flame and set it aside.

Step 5

In another pan, heat 1 tbsp ghee. Add 1.5 cups of milk and bring to a boil. Add grated coconut and give a mix. Cook for 8-10 minutes or until the mixture thickens.

Step 6

Mix the thick coconut mixture with the lauki mixture. Keep on medium flame and cook for 8-10 minutes more.

Step 7

Now pour the barfi mixture into a mould and even it out. Let it set for 3-4 hours or till it holds shape properly.

Step 8

Cut the slab into square or rectangular barfis and serve.
