How to make Mango Cheese and Avocado Salad
Step 1
Peel and chop the mango and avocados. Place the mango, avocados and Bocconcini cheese into 3 different small-sized bowls.
Step 2
In a small bowl, prepare the marination by mixing the olive oil, lemon juice and season with salt and black pepper. Pour 2/3rd of the marinade over the diced avocado and let it chill for 10 to 15 minutes in the refrigerator. Divide the remaining 1/3 of the marinade into two and pour evenly over the cheese slices and diced mangoes.
Step 3
Set up in the plate directly, using a steel round mould, starting with the layer of avocado, then cheese layer and lastly mango.
Step 4
Garnish with Arugula lettuce on top, American corn or as per your choice and serve cold. Enjoy!
