INGREDIENTS

2 medium zucchini

3 tablespoon quinoa

1 tablespoon flour

1 cup almond milk

1 tablespoon extra virgin olive oil

0 salt as required

0 oregano as required

2 tablespoon sago

1 onion

1 capsicum (green pepper)

0 chilli flakes as required

How to make Quinoa stuffed zucchini in Sago sauce

Step 1

To begin with this simple recipe, wash and peel the zucchini. Cut the zucchini in long strips. Next, heat a pan and add water, put the zucchini strips and steam it for a minute or so.

Step 2

Soak sago in water, you can soak it for overnight or for 4-6 hours. Next, take a pan and add olive oil, once the oil is hot enough, add onions, capsicum, stir fry it.

Step 3

Add quinoa to the veggie mixture followed by oregano, chili flakes and salt. Once done take a plate and wrap the zucchini and fill it with the veggie mixture. Keep it aside.

Step 4

Next, take another pan and prepare a sago sauce. To begin with the sauce, heat the pan and add oil and the flour, sauté flour till it turns little brown, now gradually add almond milk.

Step 5

Give a boil till it thickens a bit and then add salt and seasoning. Now pour piping hot sauce around the stuffed zucchini and enjoy the flavours.
